strawberry cake

I really enjoy cooking. Especially when I can play with food, do my own research and just go with the flow. No recipes, no cookbooks. Not always the result is what I wanted our close to perfect, the perfect side of it that I learned something new about the mix of ingredients, flavors and mixtures.

So, that being said …when life gives You strawberries, go to the kitchen and make a simple strawberry cake! At least that’s what I did.  It’s super simple and super delicious!

First  make the base – mix 1 cup of sugar with 200 grams of butter, 2 eggs and 2 1/2 cup of all purpose flour. And let it rest in the fridge for couple of minutes. prepare strawberries, bananas and rhubarbs. Combination of these 3 ingredients and a good amount of cinnamon is just perfect! I used 2 bananas, a bowl of strawberries and about 3 rhubarb stems.  Cut them in to small peaces.

Now for the fun part – preheat the oven to 180 degrees, spread the pastry on to 20 cm pan, add berries, fruits and cinnamon and put in the oven for about 30 minutes. You can leave it like that or 10 minutes before it’s baked, add some extra sweetness with mixture of sugar, more cinnamon and cream. And that’s it!

And this is what I learned :

tip nr. 1 – don’t make the base of the cake too thick, make it as thin as possible so You don’t end up with an extra part that’s like a cookie at the end of the cake (like I did)

tip nr. 2 – bake the base before putting on any fruit and dot some points with the fork so it can breath

tip nr. 3  – when it’s ready, leave it to fully cool down

tip nr. 4 – after some hours in kitchen, keep enjoying all the good things in summertime and go spend some quality time by the seaside. Finally it’s too hot to handle and I absolutely love it!
